So Apache is the most popular, I am guessing here but what other webservers are popular and why.

Nginx, Litespeed. What else? Speed :)

Not into server side of things just heard of LAMP thought it was an Apache alt.

most people use one of the following setups

apache
niginx
apache/nginx combo
lightspeed

those 4 above are probably 99% of servers , im not counting windows crap.

yes depends on the kind of sites you are running and how much work you want to do vrs how much $$$ you want to spend.
