how hard is it to set up sites with unmanaged computer?
as i've only used managed dedicated server hosting before????

Hard is somewhat of a relative term, it would depend on what skills you're coming in with and what you get. If you get cPanel on the VPS it takes the general purpose server and makes it a turn-key web hosting server (installs a full suite of things that you would need like Apache and FTP.) So I would recommend cPanel to almost everyone, particularly if you're new to managing your own server.
In 2019 though you can Google anything you run into. Analogous to owning a car, you may not know how to change your oil but you can learn how with a quick search. And just like a car, either you can change the oil yourself or you can pay someone to do it. Anyone who includes management "free" has simply built it into the price.

does the hosting automatically install so that https via free ssl ?
I would be happy to have our techs install an SSL for you on cPanel. But none of that is automatic, per se. You'd sign up for the free SSL at any number of free SSL sites and then we can help take it from there.
Any specials on a server that can load pages fast for a tube which now gets 27K-30K a day unique visitors
I'm sure we can work up something for you, I'll PM you for details...30k uniques may have very different needs depending on how it is being hosted.

One thing I can say is, since they set me up a year or so ago, their support department gets no "business" from me lol. Thankfully not to jinx it nothing goes wrong, it all works right and I have no reason to contact their support guys.
My host says I have a contract until january 18th if I leave they will still bill my credit card every month, can hosts do this.
Dedicated servers don't usually have contracts (we don't do contracts on them) but some hosts do. It depends on if you agreed to that when you signed up. If you didn't agree to that in writing, it would be very sketchy. Assuming you didn't agree to a contract, removing your card and telling them you're cancelling ought to be enough. Sounds like you've got a stage 5 clinger though!
